Of course I had no idea what that meant. Or who Heston Blumenthal was. So I looked him up in the Wikipedia.

Heston Marc Blumenthal...is a British celebrity chef. Blumenthal is regarded as a pioneer of multi-sensory cooking, food pairing and flavour encapsulation. He came to public attention with unusual recipes, such as bacon and egg ice cream, and snail porridge...

Gettin' it, sorta. Googled the statement and went to the BBC.

Blumenthal is famous for coming up with unusual recipes such as bacon and egg flavoured ice-cream and snail porridge, which work despite the ingredients.

Didn't add much to understanding Pep’s ingredients.

"..you think 'that is never going to work, it is not going to taste right or look good'. But it does."
